the year-round kale salad

with almond butter vinaigrette!

toss sweet potatoes and chickpeas in olive oil, salt, and garlic powder and roast for 25-30 minutes. meanwhile, throw all dressing ingredients in a blender and blend until emulsified.

assemble roasted veggies and almond butter vinaigrette in a large bowl with all remaining ingredients and toss to combine. enjoy!
