caramel apple french toast casserole

make-ahead and vegan!

first, make vegan caramel on the stove-top with cane sugar, vegan butter, and full-fat coconut milk. toss diced granny smith apples in the caramel and set aside.

combine bread cubes and caramel apples in prepared baking dish until evenly distributed. pour coconut milk flax egg mixture over the top.

cover and put in the fridge overnight. in the morning, bake on 350 F for 50-60 minutes. let cool, cut into slices, and top with whipped cream and maple syrup. enjoy!
