sheet pan balsamic veggies

with figs and goat cheese

place sweet potatoes on one pan and brussels sprouts and chickpeas on another. toss with balsamic vinegar, olive oil, garlic powder, salt, and pepper. bake for 15 minutes.

meanwhile,marinate figs in more balsamic and oil. At the 15-minute mark, add figs to pan with sweet potatoes and roast 15 more minutes.

serve with crumbled goat cheese (or vegan feta) and additional drizzles of oil and vinegar. enjoy!
