roasted carrot white bean pistachio dip

toss carrots in olive oil, cumin, salt, and pepper, and roast for 20 minutes. meanwhile, blend pistachios, remaining oil, garlic, and lemon juice until smooth.

add roasted carrots and all remaining ingredients to the food processor and blend for 2-3 minutes until smooth and fluffy. enjoy with chips, crackers, veggies, etc.
