cranberry orange baked oatmeal

with yogurt cream cheese frosting!

this baked oatmeal is gluten-free and easily vegan with a few swaps. it's perfect for meal prep or for a special occasion.

mix all wet ingredients together in a large bowl, add dry ingredients and mix-ins and stir until combined. pour into dish and bake for 40-50 minutes.

while oatmeal is baking, put cream cheese, greek yogurt, maple syrup, vanilla, and cinnamon in a food processor and pulse until combined.

allow the baked oatmeal to slightly cool before cutting into slices. top with cream cheese frosting and enjoy!
