cauliflower sweet potato quesadillas

these easy quesadillas are healthy comfort food at its finest! packed with veggies, cheese, and made with 8 ingredients.

toss sweet potatoes and cauliflower in taco seasoning and olive oil and roast before adding black beans and lime juice.

warm a tortilla in a frying pan before adding cheese and the cauliflower sweet potato mixture. brown on both sides. repeat until you have four quesadillas.

slice into triangles and serve with guacamole, salsa, sour cream, or whatever other dipping sauces you want!
