These strawberries and cream overnight oats are not your basic everyday overnight oats. They are simply decadent, there is no other way to say it. These oats will have you excited to wake up in the morning to eat your breakfast. They’re that good. The strawberry cashew cream takes everything to the next level and the touch of almond extract evokes that true strawberries and cream flavor. It’s all just too good.
Ingredients for Strawberries and Cream Overnight Oats
Rolled Oats: Packed with fiber, protein, vitamins, and minerals. They have been shown to reduce blood sugar and cholesterol in clinical studies and may reduce your risk for heart disease. In other words, they are a fabulous way to begin your morning! Make sure to get certified gluten-free if needed.
Chia Seeds: I always like to throw in some chia for extra fiber, fats, and protein. They also expand and absorb liquid and flavor, which definitely works well in these overnight oats.
Almond Milk: To make sure the oats have enough moisture to really expand overnight. Any milk will work.
Strawberry Yogurt: As this recipe is vegan, I tested it with plant-based strawberry yogurt. However, strawberry Greek or regular yogurt will work as well.
Maple Syrup: Just a touch to add some sweetness.
Vanilla Extract: Because it improves everything and contributes to that strawberries and cream vibe.
Almond Extract: The unsung hero of these oats. It really creates that delicious baked good flavor profile, so I would not omit unless you have a strong aversion to it.
Salt: Just a touch to bring out the sweetness of the other ingredients.
Strawberries: Extremely necessary. I like to dice them and add them on top of the oats the next day, but you can definitely mix them in before chilling the oats overnight if you prefer.

Ingredients for Strawberry Cashew Cream
Cashews: You will want to use and raw and unsalted cashews here, or the flavor will be significantly different. Yes, you will need to think ahead for this step. But it takes barely any effort at all. Simply dump a half cup of raw and unsalted cashews into a bowl and top off with water. Leave it to sit overnight.
Freeze-Dried Strawberries: The best way to evoke that incredible strawberry flavor in this cashew cream.
Water: Just enough to blend. We don’t want the cashew cream to be too thin. I recommend adding one additional tablespoon at a time if needed to assist with blending.
Lemon Juice: Just the tiniest bit to brighten everything up. Don’t go overboard, or your cashew cream might take on too much of a lemon flavor.
Maple Syrup: To sweeten just a little bit.
Vanilla Extract: For that authentic strawberries and cream flavor.
Almond Extract: Again, to drive home that whole delicious baked goods vibe we’re going for.

Vegan Strawberries and Cream Overnight Oats
Ingredients
Strawberries & Cream Overnight Oats
- 1 cup rolled oats
- 1 tbsp chia seeds
- 1 cup almond milk
- 1 5 oz plant-based strawberry yogurt (can substitute Greek yogurt)
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 tsp almond extract
- ¼ tsp salt
- ½ cup strawberries diced
Strawberry Cashew Cream
- ½ cup raw and unsalted cashews soaked for 6-8 hours
- ½ cup freeze-dried strawberries
- ⅓ cup + 2 tbsp water
- juice of ¼ lemon
- 2 tsp maple syrup
- ½ tsp almond extract
- ½ tsp vanilla extract
Instructions
- Make the overnight oats: combine all overnight oats ingredients except strawberries in a large bowl and stir with spoon until well-combined. Divide evenly into two airtight mason jars or other glass containers and store in refrigerator for 6 hours or overnight.
- Make the strawberry cashew cream: place all cashew cream ingredients in blender or food processor and blend until well-combined. Add 1 tbsp of water at a time if needed (weaker blenders may need a bit more).
- Assemble: Layer diced strawberries and strawberry cashew cream on top of overnight oats and enjoy! Will keep in refrigerator for up to 5 days.
