You knew I wasn’t gonna leave you hanging with this delicious mango salsa, right? I totally had to create a delicious dinner that incorporated it. These Rotisserie Chicken Tacos couldn’t be easier to pull together, but pack plenty of flavor. In 15 minutes, you’ll have an incredible dinner on the table.

Ingredients for Rotisserie Chicken Tacos

Mango Salsa: The perfect fruity, spicy vibe for these tacos. See this post for all the details.

Lazy Guacamole: One of my favorite weeknight dinner hacks! I simply mash together avocado, some lime juice, garlic powder, red pepper flakes or cayenne pepper, and some salt. Almost instant guacamole without any chopping! Because let’s be serious, the mango salsa is enough labor for one meal.

Corn Tortillas: Any tortilla will work as long as they’re taco-sized!

Rotisserie Chicken: Ah, yes. The star of the show. Rotisserie chicken is one of my favorite protein hacks. They’re cheap, delicious, and already cooked. Less work for you!

Cotija Cheese: An aged Mexican-style cheese similar to parmesan. I get a big block at Trader Joe’s and it’s pretty dang affordable, but you can definitely use cheddar or any cheese you fancy.

Make It Your Own!

  • Swap Out the Mango: If you’re feeling bold, you can try pineapple or watermelon in place of the mango to create a different flavor profile.
  • Make It Less Spicy: Sub poblano or bell pepper for the jalapeño if you don’t like spice.
  • Try a Different Protein: Yes, rotisserie chicken is the star of the show, but you could use black beans for a vegetarian twist.
  • Switch Up the Cheese: As I mentioned before, cotija is my favorite for these tacos but not a must. Use your favorite!

Ingredients
  

Mango Salsa

  • ¼ cup red onion finely diced
  • juice of one lime
  • 2 mangos diced and peels removed
  • 1 jalapeño pepper or ½ poblano pepper seeds removed and finely diced
  • ¼ cup cilantro woody stems removed and finely chopped
  • ¼ tsp sea salt
  • freshly ground black pepper

Lazy Guacamole

  • 2 avocados
  • juice of one lime
  • 1 tsp garlic powder
  • ¼ tsp sea salt
  • tsp cayenne pepper

For Assembling the Tacos

  • 8-10 corn tortillas
  • 1 store-bought rotisserie chicken
  • cotija cheese (or your favorite cheese) for topping

Instructions
 

  • Make your mango salsa! Dice red onion first and allow to marinate or macerate in fresh lime juice for 10-15 minutes.
  • While red onion macerates, dice the rest of your ingredients and add to onions and lime juice. Top with salt and pepper and stir until well-combined.
  • Make your lazy guac! Mash avocado in a medium bowl. Add lime juice, garlic powder, salt, and cayenne pepper and stir until combined.
  • Heat a medium frying pan over medium heat. Warm each corn tortilla for 15-20 seconds per side.
  • Assemble! Spread guacamole on each corn tortilla and top with rotisserie chicken, mango salsa, and cotija cheese. Enjoy!

Notes

Storage: All components should be stored separately. Refrigerate mango salsa and guacamole in airtight containers for up to 3 days. Pro Tip: Keep your guacamole from oxidizing by pressing plastic wrap and parchment paper directly on top. 
To make dairy-free: omit cheese or use plant-based feta cheese.
