Feeling curious about plant-based eating or an old pro looking for some inspiration? These 15 recipes are a great place to start.
For the month of January, I’ve decided to publish exclusively plant-based recipes. January is often a month where folks are trying to start a diet or undo perceived over-indulgence during the holidays. That’s not my goal with this plant-based series, as the June Table is whole-heartedly anti-diet. However, I believe there can be value in reducing our intake of animal products. It’s good for animals, our planet, and even our wallets! My goal in embarking on this “Veganuary” journey is to show how accessible, fun, and creative plant-based eating can be. In anticipation and celebration of this little endeavor, I have gathered 15 of my favorite plant-based recipes that are perfect for every meal.
I’m obsessed with this decadent yet nutritious baked oatmeal! I love serving it with nut butter and plant-based yogurt (Siggi’s is my favorite!).
No eggs needed for this absolutely incredible French toast casserole! Best served with maple syrup and coconut whipped cream.
If you’re looking for a nutrient-dense on-the-go breakfast that tastes like a milkshake, this is it.

This salad can easily be made vegan! Just use vegan parmesan and honey in place of maple syrup in the dressing. It’s such a hearty and satisfying salad.
Walnuts create a meaty texture in this flavorful chili. I love making a big batch for lunch throughout the week.
This soup gets its cheesy flavor from nutritional yeast, a fave vegan staple. It also packs in plenty of protein for a complete meal!

If you make any of these plant-based recipes, be sure to leave a rating and review! This encourages others to give the recipes a try and helps Google figure out I exist! You can also find me on Pinterest and Instagram.
