For the month of January, I’ve decided to publish exclusively plant-based recipes. January is often a month where folks are trying to start a diet or undo perceived over-indulgence during the holidays. That’s not my goal with this plant-based series, as the June Table is whole-heartedly anti-diet. However, I believe there can be value in reducing our intake of animal products. It’s good for animals, our planet, and even our wallets! My goal in embarking on this “Veganuary” journey is to show how accessible, fun, and creative plant-based eating can be. In anticipation and celebration of this little endeavor, I have gathered 15 of my favorite plant-based recipes that are perfect for every meal.
