If you’ve been around for a while, you know I’m really into secret veggies. This delectable PB&J smoothie is no exception. You will enjoy all the nostalgia of the classic sandwich while packing in plenty of nutrition. It’ll be your new go-to summer breakfast!

PB&J Smoothie Ingredients

Frozen Raspberries: You can use any berry you want, but raspberries are my favorite for this smoothie.

Frozen Cauliflower: If you’re not buying already frozen cauliflower, be sure to steam or blanch fresh cauliflower before freezing. This will ensure it blends smoothly without any lingering cauliflower flavor. You can follow my how to freeze zucchini tutorial for doing this successfully, if you like.

Frozen Banana: I find that another key to success when using frozen cauliflower is to use an entire frozen banana. It helps to balance the texture in a really satisfying way.

Oat Milk: My preference for bringing out the “bread” vibes in this smoothie, but any milk works.

Peanut Butter: Don’t be shy with the peanut butter! I use a full two tablespoons to really evoke the PB&J flavor.

Vanilla Protein Powder: Optional, if you’re wanting this smoothie to be a full meal.

Smoothie Tips & Tricks

  • Use a rubber spatula to scrape down the sides of the blender as needed to be sure everything is well-blended (we do not like a chunky smoothie!).
  • Be sure to blend longer than you think to make sure that cauliflower is really incorporated and no chunks remain.
  • If you’re allergic to nuts, you can still enjoy this smoothie by replacing the peanut butter with sunflower seed butter. It won’t taste exactly the same, but it will still be delicious.

  • High-Powered Blender

Ingredients
  

  • 1 cup frozen raspberries
  • ¾ cup frozen cauliflower florets
  • 1 frozen banana
  • 1 cup oat milk
  • 2 tbsp peanut butter
  • 1 scoop vanilla protein powder (optional)

Instructions
 

  • Place all ingredients in blender and blend on high until well-combined, about 30 seconds-1 minute.
  • Pour into a glass and enjoy immediately.

Notes

To make nut-free: Use sunflower seed butter in place of peanut butter!
