Do you ever want to eat dessert for breakfast but still feel healthy and nourished? If so, then these birthday cake overnight oats are the perfect breakfast for you. Packed with nutrient-dense ingredients like rolled oats, Greek yogurt, chia seeds, and cashew butter, these overnight oats somehow taste eerily similar to your favorite birthday cake. They will keep you full for hours and are immensely satisfying.

Key Ingredients for Birthday Cake Overnight Oats
Rolled Oats: Rolled oats are packed with fiber and are also a good source of protein, vitamins, and minerals. They have been shown to reduce blood sugar and cholesterol in clinical studies and may reduce your risk for heart disease. In other words, they are a fabulous way to begin your morning!
Unsweetened Almond Milk: Just enough to make sure everything combines well and our overnight oats have proper texture!
Vanilla Greek Yogurt: Greek yogurt is a great source of protein and calcium. I strongly recommend you stick with the vanilla flavor as it’s an important part of our birthday cake flavor vibe. I used this brand. Plant-based yogurt would also work well here if you would like to make these overnight oats vegan.
Maple Syrup: Just a small splash. This recipe doesn’t need a lot of added sweetener because of the vanilla yogurt and sprinkles.
Vanilla Extract: What’s birthday cake without vanilla extract?
Almond Extract: I will forever stand by almond extract. I think it is an extremely underrated ingredient for adding dimension and flavor to sweeter recipes and baked goods. Do not skip! Almond extract is crucial to the birthday cake flavor.
Cashew Butter: Adds some healthy fat and protein. Cashew butter is a big part of what makes these oats taste like birthday cake, but you can substitute another neutral nut butter like almond butter if that’s what you have on hand.
Chia Seeds: Chia seeds are magical. These tiny seeds pack healthy fiber, fats, and protein. They also expand and absorb liquid and flavor, which creates a delightful texture for this recipe.
Sprinkles: Because these are birthday cake overnight oats after all.
